INGREDIENTS:
⅔ cup plain nonfat greek yogurt (151g)
3 cloves garlic, grated
½ tsp salt
12 oz batch prepped grilled chicken, sliced (340g)
¾ cup part-skim mozzarella cheese, shredded (84g)
1 ear corn, kernels cut off (or 1 cup frozen corn)
1 jalapeño, thinly sliced (optional)
¼ cup part-skim ricotta (62g)
¼ cup basil, chiffonade (5g)
1 tbsp hot honey (21g)
INSTRUCTIONS:
- About 30 minutes to 1 hour before ready to cook, spray an 18-by-13-inch half baking sheet with olive or avocado oil spray. Remove the pizza dough from the bag and place it on the prepared baking sheet. Spray the dough with a small amount of oil and cover with plastic wrap. Allow to rest at room temperature for 30 minutes to 1 hour.
- Preheat oven to 500°F.
- While the oven is heating, prep the corn and jalapeños (if using).
- When the oven is heated, prepare your dough. Use your fingers to press the dough out towards the edges and corners of the sheet pan. Your dough may not fill the entire pan – that’s okay!
- Par bake the dough on the lowest rack of your oven without toppings for 8 minutes.
- While the dough is baking, mix the greek yogurt, grated garlic, and salt in a medium bowl until evenly combined.
- Remove crust from oven and top with yogurt mixture. Spread evenly, leaving some space around the edges to form a crust.
- Add the chicken, shredded mozzarella, corn, and jalapenos.
- Dollop with ricotta.
- Bake for 8-10 more minutes, until the crust and bottom are both golden.
- Top with basil and drizzle with hot honey. Salt to taste.
- Cut into 8 square slices.
